It’s no secret that I love Fall. Here in California, I’ve patiently waited for it to roll around and it’s beginning to dawn on me that it might not ever make an appearance. Uh…what? This is a new and unwelcome concept for me.
I love sunshine as much as the next person, but Fall has always been my favorite season—I like the gloomy, cloudy days with a little bite in the air, the wet leaves on running trails, the dark thunderstorms, the cozy slipper evenings, the baking with the fireplace up high with some spiced cider (spiking always welcome) as a companion.
The moral of the story is that yesterday, it was 86 degrees and sunny but I was determined to make something Autumn inspired, and I just wasn’t feeling standing in my kitchen slaving over a hot (toaster) oven. So instead, I dumped my favorite cool-weather ingredients in my Crock Pot and let it go to town for 6 hours. The result was definitely pumpkin-patch-and apple-orchard*-inspired, which is exactly what I was going for!
Slow Cooker Pumpkin Apple Butter
–1 29 oz can pumpkin (not pumpkin pie filling)
–2 C applesauce (I used Mott’s Natural No Sugar Added kind—it’s really good!)
–2/3 C light brown sugar
–1 tablespoon real maple syrup
–3 teaspoons pumpkin pie spice (or you can use a combination of nutmeg, ginger, cloves—any Fallish spice :))
–2 teaspoons cinnamon
Put all ingredients in slow cooker and stir. Cook on high for 1 hour, then stir and turn to low for 5-6 hours, stirring once an hour or so. Let it cool for half an hour and then store in any type of jar.
That’s it! It’s a pretty mild spread and goes great with toast, on top of oatmeal, or my personal favorite: with baked Brie and crackers. Super easy to make and my kitchen smelled like Halloween. It made me a happy girl … it doesn’t take much.
*Last year at the apple orchard, we finished picking apples and went up to the front to check out the fall produce. While I was bonding with a crate of baby gourds, my dog lifted his leg and did his business all over the side of a crate of apples. I didn’t tell anybody, grabbed his leash and ran away. Is that why I don’t get Fall this year?
